Cookies for Breakfast? Acting like a kid again!

Do you remember acting like this? See my niece below. So fun and careless!!



I remember when I used to eat cookies or sugar filled cereals (a.k.a. fruit loops) for breakfast as a kid. Real healthy, eh? But hey, at least I ate breakfast. Anyway,I felt like having some healthier child like foods this past weekend so I decided to make me and the hubby some protein cookies for breakfast. Joanna Sutter from Fitness and Spice gave me this great recipe and it was easy. YOU MICROWAVE the batter, that's it, done! I made chocolate whey cookies and vanilla whey & almond butter cookies. Pair with a banana or other fruit and your golden!!! Oh and don't forget the cup of coffee. Good to dip the cookies in, yum.



1/4 cup vanilla or chocolate whey protein powder
1 T water
1/2 t Natural Butter(melted or room temperature)
1/2 t natural almond,sun butter, or peanut butter (optional)

Mix all ingredients together with a spoon and form into a circle on a microwave safe dish. Microwave for 20-25 seconds. You can also top your cookie with a sprinkling of cinnamon or any other sugar (like honey, stevia, etc).


My Nutrition Analysis (based on using muscle milk and almond butter)

Per cookie:
84 calories
4 grams fat (2gr saturated)
5 grams of Carbs
1 gram fiber
3 grams sugars
9 grams protein

A nice balanced snack/mini breakfast, yum!

A couple of notes:
Not all protein powders bake up as well as others. I had success with 100% Whey powder and muscle milk light powder .
Do not over bake or it will turn out rubbery.
Under bake for a hot gooey cookie that you can eat with a spoon!
Eating the batter is just as good!!

Now go play, laugh, and let the inner kid in you come out!

chocolate whey is the best for health and test but i think Whey protein isolate is also extremely low in fat and cholesterol, but best of all, you’re reaping the benefits of what protein can do for you such as giving you an energy boost, repairing your body, burning fat and building muscle, and a number of things.

keep the recipes coming. i like baking/adding whey to a lot of foods... oats, greek yogurt, smoothies, etc...

this is the best i have found to bake with and add to hot foods. it's made for it.... check it out.

way easy, thanks for sharing Linsey... I really ban the micorwave but I think this is the perfect thing for Kainoa to make pretending he is cooking.

This might sound silly, but do you mean 1/2 teaspoon of butter-butter/the parent to margarine?
