When I see Organic Bison on sale, it is a must grab. Sprouts had a special on organic ground bison and I was super pumped! Now what to make with it?!?!?! Decisions, decisions. Tough. Anyway, I've been digging some of April's recipes lately and she had a yummy spicy meatloaf I just had to try. Of course I switched it up and added my own flare (bison versus turkey and green chilies versus jalapenos) but all in all it was DELICIOUS and super easy!
Green Chili Bison Meatloaf
Makes 4-6 servings
Ingredients:
•16oz of raw lean ground Bison
•3 tbsp cornmeal
•1 small can of diced green chilies
•6 tbsp liquid egg whites (or 2 whites from whole eggs)
•1/3 cup fresh salsa
•a dash of black pepper and chili powder
•Arriba Chipotle BBQ sauce
Directions:
1.Preheat the oven to 375 degrees. Spray a baking loaf pan with nonstick cooking spray, set aside.
2.Mix all ingredients together.
3.Pour mixture into baking loaf, bake for 50 minutes to 1 hour or until the top is browned and a knife inserted into the middle comes out clean
4. Top with a little Arriba Chipotle BBQ sauce for the last 5 minutes of cooking.
Meat fix accomplished!

Sounds like a wonderful recipe. I don't use any grain product myself so I'd make some adjustments (i.e almond meal for corn meal) and I use whole pastured farm eggs in my meatloaf.
Mmm I think next time I'm going to try the meatloaf with bison!!
And if you start your own blog I'd definitely read! But either way.. it's up to you!!

I saw do BOTH blogs. I have two as they have different content. That way I can spend all my waking moments on the computer...

I (currently) find the format okay. There is nothing to really state that this is "his" or "your" blog but rather a combination of your efforts (his : sport) (yours : food). I think it's cool rolling this way till you start to feel that another blog or another platform from which to publish is deemed necessary. Perhaps that will come when JPC and I post photos from our Maudies outting in a few weeks. ;-)
I like the teamwork aspect of both of you sharing the blog. It's kind of nice to go to one place for both food and training.
